Lecturers create content according to the syllabus. It is also often based on text books.
The syllabus itself is created with a multitude of internal requirements and that from partner universities and even the MQA.
That said, industry practices have moved beyond what is in text books and even what all parties agree upon. It is true that some industry practices are embedded in courses. However, things move very fast in industry.
If lecturers do get creative and share some of the latest industry practices, it may or may not be of interest to students. The problem is that many students have become very exam-oriented and focus on what is needed to pass the exam, and not this extra knowledge which will make them industry-ready.
This exam-oriented culture is too deeply ingrained. It also stifles critical thinking.
